Dúbailte is the signature whiskey of Ballina Distillery, located on the banks of the River Moy in County Mayo, on Ireland's rugged west coast. The distillery was established in 2015, the first to open in County Mayo in 150 years, and distils its whiskey twice or triple using 100% Irish malted barley in small batches, with an extended fermentation of up to seven days for a fruit-forward character. Dúbailte is the distillery's double-distilled, Double Wood expression, and serves as the perfect introduction to Ballina's core range.

Maturation
Dúbailte is matured in a combination of ex-Bourbon casks (55%) and Oloroso sherry casks (45%).

Tasting notes

• Nose: Light and fruity, with a honeyed sweetness and hints of green apple, pear and honeydew melon.
• Palate: Medium-bodied, with vanilla fudge and butterscotch developing into classic sherried notes of raisins, dried fruit, warming spice and a subtle nuttiness.
• Finish: Warm, with lingering notes of walnut and honey.
