Bologne is the only distillery in Guadeloupe that continues to cultivate black cane. This variety, now forgotten by distillers because of its low yield, is only cultivated by Bologne for its quite exceptional aromatic potential: it expresses a “concentrate” of cane, an ultra aromatic essence, which today enters in the blends of all Bologne rums.

We have chosen to make a few bottles from a limited series: “Black Cane”, a true quintessence of Bologne. The cutting of the black canes is done by hand during sunny days. As soon as the juice is extracted, they already have more powerful and delicate tropical fruit aromas than any other variety of cane.

Bologne applies a very precise low-temperature distillation style which favors, thanks to our copper column, the expression of the terroir and of this variety of cane. For several months, the blending of black cane rums enters a maturation phase during which an evaporation favorable to concentration and a slow oxidation take place, both of which contribute to perfect refining for this exceptional rum.

Tasting Notes :

Nose : Soft, with great aromatic complexity, very harmonious. Particularly rich. The first nose is empyreumatic and exotic (cane, mango, maracuja). It is then supported by the acidity of citrus fruits (lime, orange) then evolves towards white flowers.

Palate : Soft, balanced. The fresh cane is extraordinarily transcribed, becoming its very essence. The mid-palate is concentrated, luxuriant, exuberant, and full of gourmet fruits: banana, pineapple, mango, pear, citrus fruits remain very present. 

Finish: long and tenderly spicy (ginger) and never ceases to amaze with its authenticity and depth. Exceptional persistence. The retro-olfaction is floral, impressive in finesse and length.
