This is single cask N° 08/25 specialy selected and bottled for Ambrosius of the Planteray Rum range.
The distillation origin is Panama, using Panamanian molasses in column stills.
Its aging and finishing sequence is quite involved:
- Tropical maturation (in Panama) in bourbon barrels.
- A short continental maturation period in France (Ferrand casks) for some months.
- Final finishing in White Port casks (casks that previously held white port wine), for another 1.5 years approximately.
Tasting Notes :
Nose: Fresh, inviting: notes of peach, pear, honeysuckle, vanilla, caramel, cashew nuts, and cinnamon.
Slight floral and fruity character emanating from the white port influence.
Palate: mooth, balanced. Flavours of honey, caramel, orange peel, plum with gentle spiciness. Also touches of pear, toast, and sweet oak from the cask finish
Finish: Long and sweet. Citrus zest, banana, apricot, raisin, and spice linger.
A bit of wood bitterness or dryness may show from the cask influence.
