An aperitif based on a Belgian gin flavoured with kumquats and distilled at the Biercée Distillery.

Ingredients : neutral grain alcohol, fresh untreated citrus fruits, juniper berries, cocoa, cloves, hops, malt, cane sugar, water, orange juice from concentrate (13.5%), acidifier: citric acid, bitter orange flavour, quinine, gentian infusion. Colourant: carminic acid. Preservative: potassium sorbate.

This delicious rum is made using traditional techniques and local Fijian sugar cane. First aged in this tropical climate in bourbon casks, the rum is then sailed to the southwest of France for a second maturation in French oak casks.

Tasting Notes:

Color: Gold.

Nose: Cooked pear, crème brûlée, candied ginger and just a touch of smoke.

Palate: Toasted coconut and fried banana, shortly followed by dried fruit and spicy oak.

Finish: Lasting butterscotch, peach and ginger.

A 2007 Speyside single malt from indie bottler Signatory Vintage, made at a mystery distillery and matured for 13 years in refill sherry butts before being married and then bottled in June 2020 as part of its Un-Chillfiltered Collection.

Tasting Notes:

 Nose: Lots of honeyed barley and runny caramel notes, balanced by a robust helping of earthy barley.

Palate: Peaches and cream, walnut loaf, sticky toffee pudding, Sesame Snaps.

Finish: Lingering toffee sweetness on the finish.
