In the distillery in Burgundy, the violette figs are quickly cut in half and soaked in neutral alcohol that has previous been distilled in Northern France. The violette figs are left to infuse for a minimum period of 3 months. The neutral spirit extracts the beautiful color and subtle flavour of the fig during this time. Eventually it takes 7 years to come to the final result.

Tasting Notes :

Appearance : A rich, dark purple in the bottle, softens to a pale mauve when poured.

Nose : Bright, sweet fresh figs give away to berry jam, honey and vanilla.

Palate : Fresh fig, raspberry jam with a hint of peach and honey

Made from a blend of rums from British Guyana, Barbados and Trinidad and Tobago, this “Caribbean” blend is full of aromas.
Aged in bourbon casks for 3 to 5 years in the Caribbean, the rums are then imported into Europe and carefully tasted, to be part of the final product.

Appearance : Shiny golden colour

Nose: fruity and spicy

Palate: first, sugar cane juice, fresh and light at the same time. Then, tropical fruits and smoothness

Finish: fresh on cloves, ginger and liquorice notes with hints of spices

Bouche : il est très agréable étant en parfaite harmonie avec les arômes ressentis. Longueur persistante.

Le domaine: L'activité viticole du domaine remonte à 1922, sous le nom de João Pires & Filhos.
