You will find a spectrum of seaside and medicinal peatiness, along with kipper-like smokiness, all surrounding a core of fruity malt whisky character.The Peat Monster is a whisky for those who love intensity, flavour and freshness, balance and drinkability. A whisky for those who appreciate the blending of seemingly dissonant elements to create something sublime.

The Spice Tree 46%

Matured using a custom-made cask with French oak for the heads and American oak for the bodies. SPICE TREE is a rich, intense malt whisky redolent of baking spices and layered with toasty oak accents that complement the underlying distillery character.

The Story of the Spaniard 43%

In this, our first release, 48% of the whiskies have been aged in ex-Sherry casks and 25% in ex-Spanish red wine casks. You will find a whisky that is full, soft and sumptuous on the palate with flavours of citrus peel and pears poached in red wine and spices. It’s a whisky ideal for late evening sipping or stirring into a cocktail.

Rum Sixty Six Family Reserve was originally just that, a rum reserved for the family! Luckily for us the Seale family, five generations of whom have produced rum at the Foursquare distillery, chose to share this marvellous drop with the rest of us!

A blend of pot and column still rums 'tropically aged' for a minimum of 12 years in American oak barrels. The reference to 'tropical' ageing is included to highlight the fact that due to the warm Bajan climate, the maturation process is taking place faster than it would here in Europe.

Tasting Notes :

Appearance: Amber

Nose: Dried fruits, dark molasses and nutmeg.

Palate: Smooth, rounded and rich with pleasing oakiness and whole vanilla pods.

Finish: Long with more fragrant vanilla and drying oak.

Œil : robe jaune paille scintillante avec de fines larmes.

Nez : incisif d'arômes de vigne et de cave.

Bouche : Attaque raffinée, très élégante et rafraîchissante avec une texture presque croquante et beaucoup de pierre à fusil dans la finale avec aussi des petites baies blanches et des fleurs.

Le domaine : Créé en 1994 par Yiannis Paraskevopoulos et Leon Karatsalos, les vignobles GAIA sont répartis sur 2 zones bien distinctes et réputées de la Grèce : le Péloponnese (avec l'appellation Nemea) et l'île de Santorin.

1996 marque un premier tournant dans l'histoire du domaine. Christina Legaki intègre l'équipe de GAIA en tant que troisième associée. Au même moment, 7 hectares de vignes supplémentaires sont achetés notamment pour la construction d'un nouveau chai de vinification.

A ce jour, GAIA Wines a une production d'environ 350.000 bouteilles - toutes élaborées avec les plus hauts standards de qualité.
